Of course the problem with this method is that the meat spoils and became infested with maggots. In order to combat this problem, Native Americans would build small smoky fires and place the meat on racks over the fires. The smoke would help with bug problem and help preserve the meat at the same time.
The traditional process of barbequing began to change when Europeans and Africans immigrated into the region of the Southern United States. Pigs and cattle were brought to the new world and this became the main source of meat. Pigs were favored in the South because of the little care that pigs required to thrive. The racks that Native Americans used were replaced with smoke houses and pits.
Slow cooking meat was reserved for poor cuts that were left for slaves and people with low income. Higher quality meats were cooked more slowly and remained juicy and tender. Since there was obviously no way to refrigerate meat at the time, meat would have to be consumed, spiced, or smoked quickly after an animal was slaughtered. Spices usually were made up of large quantities of salt that would dry the meat and lower the chance of contaminants spoiling it. Smoking had the same effect as spicing.
